It just means, the number of letters you would need to change/add/remove to turn the text "Joe Johnson" into the text "Josh Jackson" is not very high. Nerdy joke.
Is it just the number of letters needing to change, or the distance the current letters are from the new letters? I guess I should google it too

Just the number of letters. Adding a letter, removing a letter, or substituting one letter for another each counts as one "change", and the number of total changes is the edit distance.

I prefer something chewy to something candy-coated. If I am traveling/flying, I actually like to grab a snickers, though.
