I get home from work Saturday about 6:45 MDT, so 5:45 AZ time. So anytime 6 or later should work for me.

I don't have a problem with 16 people, but not if two of them are inactive for most or all of the season.
I suggest waiting until Thursday or Friday and remove them on the day of the draft if need be.

I would bite the bullet and be there, but I would much prefer Saturday (or Friday). Sunday evening in Arizona is middle-of-the-night Monday for me, and Monday is work day.
But I realize that I'm a minority so I'll adapt.

5PM Sunday evening in AZ would be 9AM Monday for me. I'm off of work that Monday, so it would be fine with me.
